Ingredients
(Makes 12 blondies)
2 large handfuls of fresh raspberries
100g bar of good quality white chocolate
1 handful of white chocolate chips (optional)
1/4 cup of unsalted butter (at room temperature)
1/2 cup of caster sugar
2 large eggs
a dash of vanilla extract
1 cup of plain flour
icing sugar
icing sugar
small pinch of salt
Method
♥ Pre-heat the oven to 170 degrees celsius/150 degrees fan.
♥ Lightly grease an 8" baking tray with butter.
♥ Melt chocolate using either microwave or bain-marie.
♥ Sieve flour into a mixing bowl and add salt. Combine then set aside.
♥ Beat together butter and sugar until light and fluffy.
♥ Add eggs and vanilla to butter and sugar mixture then stir in melted chocolate.
♥ Stir in flour and salt until just combined.
♥ Gently stir in raspberries (and white chocolate chips).
♥ Spoon mixture into baking tray and spread evenly.
♥ Bake for approximately 40 minutes. Your blondies should be golden brown and a knife should come cleanly out the centre.
♥ Cool in tray.
♥ Cut into squares.
♥ Dust with a little icing sugar.
♥ Dust with a little icing sugar.
♥ Enjoy!

I made this today. I did not add the extra white chocolate, nor the icing sugar. It is (only just, very nearly Was) simply delicious! I wonder if it freezes well, does anyone know? Yummo x
ReplyDeleteOh I'm so glad they turned out well! I asked for a little advice and, yes, apparently your blondies should freeze very well. You could try separating them with greaseproof paper so they don't stick together. :-) x
